Louvi Meh Lahana

We grew up with this perfect dish for a summer lunch. It is so easy, quick and cleansing for the soul. Make sure you have a hunk of good bread for dunking. Black eyed beans, Lahana (or spinach), Garlic, Lemon Done!

LOUVI MEH LAHANA

SERVES: 3 - 4

PREP TIME: 53 SECONDS

COOKING TIME: 20 MINS

INGREDIENTS:

  • 2 Tins Black Eyed Beans

  • Garlic - about 4 cloves

  • 1 Lemon - to serve

  • Extra Virgin Olive Oil - to serve

  • 500g Lahana (or Spinach)

  • Salt & Pepper to taste

SERVE WITH HUNK OF BREAD - (SEE RECIPE GREEK VILLAGE BREAD)

METHOD

Pour two tins of black eyed beans with their juice into a saucepan, adding a good pinch of salt. Roughly chop Lahana (if you can find it) or Spinach and add to saucepan. Throw in your garlic cloves, cover and place on medium heat for 20 mins and that’s it. So simple, so simple.

Serve with a good glug of olive oil and squeeze of lemon, and don’t forget your hunk of bread to mop up those juices.
